Our summer-only release, built for Miyazaki heat. Unusually for our summer shochu, the shochu is aged three and a half years, resulting in a long, layered aftertaste. At 20% ABV it stays easy to drink, and still finishes long.
This year's potato is Benimasari, a red-skinned variety as popular on the table as it is in the distillery — a cross of Beniazuma and Kyushu No. 104, with moist, dense flesh that gives up aromas of apple and pear and a soft, refined sweetness.
Distillation leaves that character intact: light on its feet, with a real core of flavor underneath.
